My Marmite-vegetable soup / Benim Marmite-sebze corbam

It is first time I have ever used Marmite in my kitchen, so I was very anxious about the results.
I made up the following, easy recipe and crossed my fingers. The result was great! A hearty, nutritious, very low carb (only from vegetables) and fat soup which both my husband and I loved. Here is the recipe:

* 1 tbsp olive oil
* 1 small onion
* 2 bell peppers
* 3 stalks of broccoli
* 3 stalks of cauliflower
* 1 big carrot
* 1 quart (liter) vegetable broth
* 1 tsp Marmite

Slice onions and peppers as ribbons. Heat olive oil and stir them with oil for 5 minutes. Cut carrot into 2-3 inch pieces. Add broccoli, cauliflowers and carrots into the onion-pepper mix. Stir them together for 3 more minutes. Add the hot vegetable broth, mix them all and stir Marmite in it. Season it with black pepper, red pepper flakes and salt. Let it boil for 40 minutes.
Voila! Your soup is ready. Bon apetite. :)

Bu Marmite'i ilk kullanisimdi, o yuzden sonuc konusunda biraz endiseliydim.
Iste tarifi:

* 1 corba kasigi zeytinyagi
* 1 kucuk kuru sogan
* 2 dolmalik biber
* 3 dal brokoli
* 3 dal karnibahar
* 1 buyuk havuc
* 1 litre sebze suyu
* 1 tatli kasigi Marmite

Sogan ve biberleri serit seklinde dograyin. Zeytinyagini tencerede isitip, sogan ve biberleri 5 dakika kavurun. Havucu 4-5 cm lik parcalar halinde dograyin.. Voila! Corbaniz hazir. Afiyet olsun. :)

  2. Hi Noor,

    Thanks for your comment.

    Marmite is creamy, brown colored yeast extract. It is very popular in New Zealand and Australia. I don't know why, but they love eating it as a spread on their bread. I wouldn't do that. I found it a bit salty to spread on bread, I prefer sweet toppings like Nutella or jam. ;)
    It is good for cooking thou, it gives a certain taste and texture to the dish (especially soups). You can use it instead of vegetable broth or boullion cube.
    Ingredients of Marmite as follows: Yeast Extract, Salt, Vegetable Extract, Niacin, Thiamin, Spice Extracts, Riboflavin, Folic Acid, Celery Extract, and Vitamin B12.
    You can find nutrition info and more from here: http://www.marmite.com/love/nutrition/nutrition.html

    I would say give it a try. But get a small bottle, so that you wouldn't waste if you don't like. Even if you didn't care for the taste, you can always ask an Aussie or British friend if they would like to use it. ;)

    Hope this helps.
    Cheers,
    Pelin
